AUTUMN CRUNCH

What a day! In a good way of course, how are you this Tuesday? I have been doing a little DIY painting and putting together a vintage style notice board, making pretty packages (which I hope will lift the spirits of all who receive them) and sorting through an unbelievably awesome collection of vintage lace which was given to me by a lovely lady. Just what will I do with it all?! I like to hold each piece in my hands and go over each beautifully stitched detail. I was quite speechless when I opened the box to find all this vintage treasure inside. Thank you so much Liz x Keep reading for my first Autumn recipe!

I stopped for lunch after a dash to the post office, and please ignore the generic bean burger, and lead your eyes to the coleslaw which I threw together from bits and bobs, it turned out so delicious I thought you might like to try it? It only uses a little mayo so it’s quite a light side dish. (dieters ignore the sneaky bit of cheddar)

Autumn Crunch Coleslaw
1/2 red onion thinly sliced rinsed then soaked in a splash of lemon juice
1 small red apple cored and grated
2 carrots peeled and grated
1/2 a Kohlrabi peeled and grated
1-1/2 inch cube of mature cheddar cheese grated
1/2 teaspoon of chives fresh or dried
1/2 teaspoon black onion seeds
1/2 teaspoon dried parsley
1 tablespoon of mayonnaise
season with salt and black pepper

Slice and soak the red onion in a medium sized serving bowl for about 5 minutes, then add in all the other ingredients (mayo last), mix with a fork to combine and evenly coat everything with that little dash of mayonnaise. Ta Da! If you try it, let me know what you think x
